Indian cooking is an art and a Science. Indian food is mostly based on Ayurvedic science. Back to the word Rasoi - it is the Hindi word for kitchen. It is the place where world's most delectable recipes are cooked. Originally it was cooked on a Chulha, which was a stove made of mud, in which coal and wood was burnt. That gave a very nice aroma of smoke to the food. Now a days we use cooking gas or electric heater to cook food. The balance of spices and herbs with the vegetables / meat is perfect. Spices provide the flavor and enhance the taste of the recipe to make it aromatic and sumptuous.
